Ingredients: 1/2 cup grass-fed butter, 1/2 onion chopped, 2 celery stalks chopped, 4 garlic cloves chopped, 1/4 cup arrowroot, 5 cups chicken stock, 3 cups shredded cooked chicken, zest and juice of 1 lemon, 1 cup heavy whipping cream, salt, pepper, oregano
Directions: saute celery, onion and garlic in the butter until softened. In a separate bowl whisk together arrowroot and stock. Add vegetables to the bowl. Using an emulsifier blend all together. Put back in pot and cook about 15 minutes until soup thickens. Add all the remaining ingredients and cook another 10 minutes.
