Beef Empanadas

If I am being honest, and I always am, these were a bitch! I doubled the recipe and somehow still did not have enough dough. I think you need to double the dough and keep everything else the same. You are supposed to get 6 servings from the recipe below. My family ate these up! They were delicious! Ingredients:

Dough: 1 cup shredded mozzarella, 5 tbsp cream cheese, 3/4 cup almond flour, 2 tbsp coconut milk, 1 tbsp coconut flour, 1 beaten egg, 1 tsp garlic powder, 1/2 tsp sea salt

Filling: 1/4 cup grass fed butter, 1 pound grass fed beef, 1 chopped onion, 1 tbsp minced garlic, 2 tbsp tomato paste (sugar free), 2 tsp ground cumin, 2 tsp ground oregano, 1 tsp chili powder, salt and pepper

Directions:

Dough: Melt cheeses in a pan stirring frequently. Transfer to a bowl. Add everything else and stir until well blended. Cover the bowl with plastic wrap, pressing it onto the surface of the dough and refrigerate for 30 min

Filling: Brown the beef. Add onion and garlic and cook until softened. Add everything else then set aside to cool.

Empanadas: Preheat oven to 425. Line a baking sheet with parchment paper. Cut the dough into 12 (3 inch) circles. Spoon filling into the center of the circle. Fold in half and use a fork to press and seal the edges together. Bake 10-12 minutes or until golden brown.
