2 Year Reflection On My Diet

It has been two years since my switch has really turned on.  I had always been pretty healthy and did my best to live a positive life.  When I decided two years ago to truly step it up is when my entire life changed.  I had gotten to a point in my health where I really wanted to feel better and I searched until I found keto.

I found the lifestyle that works best for me.  Cutting out all the inflammatory foods makes me feel amazing.  I have put my lupus in remission and am healthier than I was in my teens and 20’s.  It is truly unbelievable. 

Just as I have evolved so has my diet.  When I first started out on keto I was beyond crazy strict.  I counted every single macro that went into my mouth.  I never went above 15 net carbs and made sure I consumed all my fat.  I did not eat anything that was not keto approved to avoid inflammation.  This has changed.

During these 2 years I learned about the AIP (Autoimmune Protocol Diet).  It avoids more foods than keto, but counting macros and consuming high fat is gone.  It allows you to slowly, one food at a time bring these potentially inflammatory foods back into your diet.  You must be in tune to your body and see if your body reacts when these foods are incorporated back in.

Unfortunately for me, I react to most of the foods on the list.  I have found if I eat more than a ¼ cup of rice my belly bloats, I feel fatigued and even my attitude changes.  Potatoes are a complete nightmare!  The darker the bean, the worse I feel.  Therefore, chick peas and white beans are ok in moderation.  Apples, oranges and pineapple, NO WAY!!!!  Almost an immediate headache and stomach issues.

My body seems to have a hard time breaking down certain foods, so I avoid them.  I will treat myself to ¼ of white rice every 10 days or so.  Me and brown rice are not friends, lol!  I will admit that because I have celiac avoiding carbs is easier for me than it is for others.  That made the transition to this way of life very easy for me.  Also, feeling like shit every day due to my autoimmune diseases and seeing how great I felt almost immediately after altering my lifestyle.

Since losing 20 pounds in the beginning of my journey I have also put my lupus into remission.  As for the crazy counting, I no longer do that.  I probably stay under 30 net carbs a day and come nowhere near whatever my fat macros should be.  I eat a ton of lean protein and enjoy my Isagenix shakes daily.  I would say I live an AIP/Lazy Keto lifestyle.

The thing about the way I eat is, “I eat to live, I do not live to eat.”  That is how I function daily.  I found something that changed my life.  Gave me back my energy and my body.  My disease no longer controls me, I control it.  I will not let it win again.
