Ingredients: 1Lb 85% lean ground beef, 2 hot jalepeno peppers, 1 small onion, 1 pack taco seasoning, 1 package shredded Mexican cheese, 2 eggs, salsa
Directions: Pre-heat oven to 375 degrees. Brown meat and drain. Let it cool in a single layer in a baking pan. While meat is cooling soften peppers and onion in pan. Mix together meat, peppers, onion and taco seasoning. Now add 2 eggs scrambled to bind ingredients together. Top evenly with shredded cheese. Bake 20 minutes or until cheese is melted. Divide into 4 servings. Top with 2 TBSP salsa if desired.
